
We came across a fun snack today. I’m a snackaholic, among other things. I don’t always go for the good for me variety, but this one made the child happy even because it had a fun name: Crunch Cactus Snack. Which has now become the Happy Little Forest Snack.
The original recipe should have been made with graham crackers, green pepper, broccoli, and peanut butter.
Here’s ours:

Happy Little Forest Snack
*Our impromtu kosher version uses matzo, because we didn’t have graham crackers. This is an easy to adapt recipe.
Ingredients:
*2 graham crackers
*green pepper (or carrot or a veggie of your choice)
*2 small pieces of broccoli
*peanut butter
*chopped nuts for terrain texture
Directions:
Spread peanut butter on one cracker. Cut oval pieces of bell pepper and cut a flat edge across the bottom. (We cut a flat edge on the carrots). Cut the stems off two pieces of broccoli. Stick the vegetables in the peanut butter to look like a happy little forest scene. Optional: Crush the second graham cracker and sprinkle crumbs over the peanut butter to give it a dirt effect. Or use chopped nuts to give it a similar effect.
Viola!
Happy Kid! He’s happy he has a cute little snack and actually believes he is eating a forest. I’m happy he’s eating veggies.

What a cute snack – it does look like a forest! I have weird kids – they don’t eat peanut butter at all, so not sure this one would work for us, but will go poke around your site.

Love that! Would be a great crafty birthday treat for school, minus the peanut butter. Maybe flavored cream cheese instead?

Hi I’m visiting from SITS. I would totally love to eat a forest! That’s one cute snack idea. I think the matzo crackers are better anyway. Graham crackers seem to be too sweet to go with the veggies.
