We here at the Urban Village have been trying to eat more veggies. On a personal level, I try and try to become better friends with the leafy greens and vitamin packed beauties because I know not only do I want to increase my health, but I also want to set the example for my kids. I want them to be familiar with veggies young and not wait until they are 30 to understand the goodness in veggies.
I want them to see:
- Good veggies
- Colorful veggies
- New, different, exotic veggies
- Fresh veggies
- Cooked veggies
- Raw Veggies
- Tasty Veggies
In order to eat more veggies, we joined an organic veggie co-op. Each week a new “share” of veggies is offered. We have a general idea what might be there, but it is something like opening the baskets on Chopped, some times I’m not sure what we’ll be getting. The co-op offers different share sizes from small to large. We are currently a small share family.
I get these fresh, organic veggies weekly and lately, I’ve been stumped on what to do with them. I now have four purple onions that I’m not sure how to use. So, to increase my veggie accountability in using these veggies and to create a personal collection of veggie recipes I can easily refer to, I will be exploring what I do with my weekly share.
I’m tired of the sad, forgotten organic lettuce in the fridge, wilted, slimey, and useless. I need to start using these veggies in the NOW! It’s what I want for our family.
This week’s share:

- Head of lettuce
- Spinach bunch
- 1 potato
- 1 tomato
- 1 purple onion (gah! another onion!)
- 2 avacados
- 1 bag of baby carrots
- 1 orange
Time to go figure out what to do with the veggies this week. I’ll keep you posted on the developments at our Veggie Hut.
But could I get a little help please?
What the heck do I do with all these onions?!?
Does anyone have an purple onion recipes they’d like to send my way?

Purple onions- I would make onion rings with them. You might check the internet. I’m sure they have great ideas and recipes. Enjoy your veggies!
I’m a pescatarian – so I eat mostly vegetables, but I still eat fish. You are so lucky to be part of a vegetable co-op that sounds awesome!
Here’s a few recommendations I have for you. Go to your local library and check out some vegetarian cook books. There are so many amazing recipes out there for veggies. One of my favorites is Linda McCarthy’s vegetarian cook book. Also you should check out veggie cook-books for kids since I’m sure they are not going to like most of the recipes and adult would.
For the avocados – mash them up and put on sandwiches or cut them up and put on a salad and of course you can always make guacamole.
For the onions – cut them up and cook them with mushrooms or green peppers and use them on top of hot dogs or other sandwiches. You can always chop up onions and freeze them to use in other recipes.

Red onions? Salads of course, You don’t like ‘em raw. What about pizza? I like eggplant, squash, mushrooms, and just about anything on pizza. And I make my pizza with just a dash of cheese and liberal dash of olive oil. Who needs meat with meaty eggplant topping? And red onions and yellow squash? What color!
